Tomatoes are one of the best fruits that can be used in so many different recipes. This recipe is a very quick one and it is great for a healthy summer lunch. Light, colorful and simple.
Ingredients:
1 pint cherry tomatoes
3 cloves garlic
2 tablespoon extra virgin olive oil
1 teaspoon salt
1 tablespoon red wine vinegar
1 tablespoon chopped fresh thyme
1/3 cup peeled Parmesan pieces
Directions:
1-Preheat the oven to 425 degrees Fahrenheit.
2-Place tomatoes and garlic in a large bowl.
3-Add olive oil and salt.
4-Gently toss to combine.
5-Pour tomatoes and garlic into a single layer on the baking sheet.
6-Bake for 12-15 minutes, or until tender.
7-Peel 1/3 cup of Parmesan cheese by using a vegetable peeler.
8-Wait until the tomatoes are room temperature.
9-Crush the roasted tomatoes and garlic by using a fork.
10-Add red wine vinegar and thyme into the crushed tomato and garlic mixture.
11-Place crushed tomato mixture on a bread slice.
12-Add peeled Parmesan pieces on the tomato mixture.
