It is almost summer and corn is one of the most affordable, common and delicious vegetable to eat. Here is one simple yet delicious recipe that you can try.

Ingredients:
4 ears of corn
½ cup feta cheese crumbles
1 cup thinly half-moon sliced cucumber
1 cup thinly half-moon sliced red onion
1 tablespoon rough chopped tarragon
2 tablespoon freshly squeezed lemon juice
½ tablespoon white wine vinegar
2 thick slices of rustic bread
3 tablespoon of extra virgin olive oil
Directions:
1-Add red onion slices and 1 tablespoon lemon juice in a small bowl and set aside 15-30 minutes.
2-Preheat the oven to 400 Fahrenheit Degrees.
3-Rub the corns with 1 tablespoon extra-virgin olive oil.
4-Bake them about 25- 30 minutes.
5-Cut the kernels off the cob, when the corn is cool.
6-Add corn kernels, cucumber slices, feta cheese, tarragon, 1 tablespoon lemon juice, vinegar, red onion slices, 2 tablespoon olive oil, 1 tablespoon salt and 1 teaspoon black pepper in a large mixing bowl and toss them gently.
7-Serve at room temperature or cold on a slice of rustic bread if you like.
