I serve almost all my casseroles as main meal for brunches since I can prepare them a night before. It is simple, very filling and flexible recipe.
Servings: 3-4
Preparation time: 20 minutes
Cooking Time: 55 minutes
Total time: 75 minutes
Ingredients:
1 lb. ground beef
½ pint cherry tomatoes cut into halves
3 cups of rough chopped bread
1 cup of milk
6 eggs
6 chopped green onions
1 cup shredded mozzarella cheese
2 teaspoon salt
1 teaspoon black pepper
5-6 basil leaves to garnish
Directions:
Preheat the oven to 375 Fahrenheit Degrees.
1- Brown Ground Beef: Place the ground meat in a medium nonstick skillet.
2-Season it with 1 teaspoon and 1 teaspoon black pepper.
3-Use a wooden spoon or heatproof spatula to break up the ground beef into equal-size pieces as it cooks.
4-Cook over medium-high heat about 6-8 minutes until the ground beef is no longer pink.
5-Let the ground beef cool off.
6-Add milk, eggs, 1 teaspoon salt, and mozzarella cheese in a large bowl and whisk them together.
7-Place chopped bread in a casserole dish (I used a bakeware with the dimensions of Width: 12.75“/Depth: 8“/Height: 3“)
8-Pour egg mixture over the chopped breads.
9- Add browned ground beef, cherry tomatoes and green onions on top.
10- Cover and refrigerate overnight, or bake immediately.
11- Bake 45 minutes covered and 10 minutes without the cover.
12-Serve it when it is warm.
