Have you ever tried broccoli, lemon and garlicy yogurt together? Here is your chance to try a very simple, delicious and healthy soup.
Ingredients:
8 cups broccoli florets plus 3-4 of them for presentation
2 lemons or ¼ cup fresh lemon juice plus 3-4 thin slices for presentation
5 cups of vegetable stock
3 teaspoon salt
2 teaspoon black pepper
1 teaspoon red pepper
2 tablespoons of extra-virgin olive oil
1 cup Greek yogurt
1 clove or 1 teaspoon of crushed garlic
Directions:
1- Add broccoli, 2 tablespoons of olive oil, ¼ cups of lemon juice, 2 teaspoons of salt, 2 teaspoons of black pepper and 5 cups of vegetable broth in a medium pot, cover and simmer for 15-20 minutes.
2- Add 1 clove of minced garlic, 1 teaspoon of salt and 1 cup of Greek yogurt in a medium bowl and mix them until they are all combined.
3- Let the soup cool down for 5-10 minutes.
4- Add the soup to a food processor and pulse about 2- 3 minutes until it is smooth.
5- Serve with yogurt mixture, red pepper flakes, broccoli florets and a few slices of lemon.
