I feel like I have super powers since I am capable of making my ice cream without an ice cream machine. You should feel the same way, since you are almost there. You can make it days before if you have guests over and keep it in the freezer. Let’s make it!
Servings: 3-4
Preparation Time: 30 minutes
Freeze Time: 6 hours – 24 hours
Total time: Minimum 6.5 hours
Ingredients:
3 cups of heavy whipping cream
2 ½ cups of dark chocolate chips
½ cup small chopped marshmallows
1 tablespoon honey
½ teaspoon salt
Directions:
1-Pour 2 ½ cups of heavy whipping cream into a large bowl. If you will use stand mixer, then pour it to stand mixer’s bowl.
2-Beat the heavy cream by using a stand or an electric mixer about 5 minutes. Start low speed and gradually increase the speed to medium-high as it thickens until stiff peaks form.
3- Keep the whipped cream in the fridge until the chocolate mixture is ready.
4-Heat 2 cups of chocolate, 1 tablespoon honey, salt and ½ cups chopped marshmallows in a heatproof bowl set over a saucepan of simmering water. Don’t let the bowl touch the water otherwise you will cook the chocolate mixture.
5-Stir constantly until chocolate is melted. Do not panic, if all the marshmallow pieces are not melted. It will make the ice cream chewier.
6- Wait 5-10 minutes until the chocolate mixture is at room temperature.
7-Add ½ cup of whipped cream to your chocolate mixture and mix gently with a rubber spatula to lighten the mixture.
8-Add remaining whipped cream into chocolate mixture and fold in gently without deflating the whipped cream. Do not over mix it.
9-Scrape about half of the ice cream mixture into a loaf pan of size 8 x 4 x 2 1/2 inch or 4 cups.
10-Sprinkle ¼ chocolate chips on the ice cream mixture.
11- Scrape the rest of the ice cream mixture into the loaf pan and top with the rest of the chocolate chips.
12-Cover it with a plastic wrap and keep it in the freezer at least 6 hours before serving. You can keep it in the freezer up to 24 hours.
Enjoy your homemade, delicious ice cream!
Note: It can be kept in the freezer 7-10 days.
