I believe there is something magical about pasta. You can get creative with it and develop so many savory or sweet dishes. This is one so simple, I only used hand full of ingredients and ended up being so delicious.

Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
1 LB your choice if pasta (I had spaghetti available, you can use any other ones you want)
6 eggs
1/2 cup of grape tomatoes
1/2 cup of cherry tomatoes
2 tablespoon of lime juice
½ cup of small chopped herbs such as thyme, rosemary and oregano
1 clove of crushed garlic
2 tablespoon of extra virgin olive oil
2 teaspoons of salt
1 teaspoon of black pepper
Directions:
1-Dressing: Place 1 teaspoon of salt, pepper, olive oil, garlic and lime juice in a small bowl and whisk to combine.
2- Bring 1 quarts of water to a boil in a medium pot over medium-high heat and boil the eggs for about 7 minutes. Meanwhile, prepare an ice bath in a large bowl.
3- Place the eggs in the ice bath for 5 minutes until they are room temperature.
4- Peel the eggs and cut them into halves.
5- Bring 2 quarts of water to a boil in a large pot over medium-high heat and 1 teaspoon of salt in.
6-Add the pasta and cook until al dente about 8-10 minutes or according to package directions.
7-Drain the pasta and transfer it to a large bowl.
8- Add the dressing and the tomatoes in the pasta while pasta is still hot and toss until combined.
9- Place the pasta into individual serving plates and top with soft boiled eggs. (I sprinkled more black pepper on mine, just sayingJ)
10- Serve hot or cold! It is delicious either way.
