Ingredients:
2 lbs. frozen sweet peas
1 lbs. bacon cut into 1 inch long slices
1 cup small chopped onions
4-5 cups of water
1 teaspoon salt
½ teaspoon black pepper
½ cup mint leaves
Directions:
1-Place the bacon in a medium-hot large pot and as it heats, break the bacon apart while stirring.
2-Cook the bacon until it is fully cooked about 10-15 minutes.
3-Take the bacon out with a slotted spoon and drain on a paper towel.
4- Add the chopped onions in the same pot you cooked the bacon and cook them with the bacon grease until they are translucent. This should take about 10 minutes.
5-Add the frozen peas into the same pot and cook them with the onions for about 5 minutes.
6-Add 4-5 cups of hot water on top of the peas and let it simmer for about 15-20 minutes.
7- Add the pea soup in a food processor and blend for about 3-5 minutes or until smooth.
8-Place the soup into separate serving bowls.
9-Top the soup with bacon and mint leaves while it is still hot.
