Creamy Mushroom Soup

Ingredients:
2 pints of white mushrooms cut into ½ inch slices
1 medium size white onion diced
1 cup of heavy cream
1 cup of water
3 cups of chicken stock
1 tablespoons of flour
1 cup of shredded Asiago Cheese
1 teaspoon fresh thyme leaves for garnish
1 teaspoon fresh oregano leaves for garnish
2 tablespoons of olive oil
½ teaspoon of salt
½ teaspoon of black pepper
Directions:
1-Add olive oil in a large pot over medium-high heat.
2- Cook until onion is soft and translucent about 5-7 minutes.
3-Add mushrooms in the pot with ½ teaspoon of salt and black pepper until the mushrooms give off their juices about 5-7 minutes.
3- Stir flour into mushroom and onion mixture and cook, stirring often, for 3 minutes to remove raw flour taste.
4- Pour chicken stock and water into mushroom mixture. Bring to a boil and cook for 15-20 minutes.
5- Turn of the heat and add the heavy cream and cheese. Stir constantly until the cheese is melted about 5 minutes.
6- Let it cool about 5 minutes.
7- Pour into individual serving bowls and top with thyme and oregano leaves.
