Who does not like creamy, delicious and simple mushroom soup? I definitely love it! Don’t you?

Ingredients:
2 pints of Cremini mushrooms roughly chopped
½ cup of diced shallots
½ cups of shredded parmesan
2 cups of whipping heavy cream
2 cups of chicken broth
1/3 cup of rightly chopped herbs such as oregano, thyme, parsley plus 1 tablespoon to garnish
1 tablespoon of olive oil
1 tablespoon of butter
1 teaspoon of salt
½ teaspoon of black pepper
Directions:
1-Heat butter and oil in a large pot over medium-high heat until melted.
2-Sauté shallots about 2 to 3 minutes until softened.
3- Add mushrooms and cook for 5 minutes.
4- Add chicken stock, fresh herbs and bring to a boil. Reduce the temperature to low-medium heat, season with salt and pepper.
5- Simmer about 10-15 minutes, stir occasionally.
6- Reduce temperature to low, stir in cream and parmesan cheese. Allow to gently simmer about 3-5 minutes until cheese is all melted.
7- Place the soup into serving plates and top with fresh herbs and black pepper.
