Cucumber Salad

Here is one super healthy yet delicious recipe for you. The main ingredient of this recipe is Pure Flavor® Georgia Grown Long English Cucumbers. They are mild, but not meek, seedless, crisp and fresh. Not only do they taste great – they hydrate you to keep you feeling great all day.

Servings: 2-3

Preparation Time: 10 minutes

Total Time: 20 minutes

Ingredients for Salad Dressing:

½ Pure Flavor® Georgia Grown Long English Cucumber roughly chopped

1/3 cup of Feta Cheese crumbles

1 tablespoon lime juice

¼ cup of extra virgin olive oil

½ teaspoon black pepper

½ teaspoon salt

Ingredients for Salad:

½ Pure Flavor® Georgia Grown Long English Cucumber cut into ½ inch slices

1 medium size carrot cut into ½ inch slices

½ of a small red onion cut into ¼ inch slices

1 can of butter beans – rinsed and drained

½ of a medium size pomegranate or 1/3 cup of pomegranate seeds

Directions:

1-Add ½ of roughly chopped cucumber, Feta Cheese Crumbles, lime juice, olive oil, salt and black pepper in a blender.

2- Blend all the ingredients until smooth about 2-3 minutes.

3- Place butter beans, carrots, cucumber slices, onions and pomegranate seeds on a large serving plate.

4- Drizzle with dressing and enjoy!
