Roasted Sweet Potatoes with Ice-cream

Sweet Potatoes are one of those veggies that are great as sweet and savory dishes. Here is one recipe which is different, simple and delicious that you can try.

Servings: 2-3

Preparation time: 10 minutes

Cook time: 35 minutes

Total time: 45 minutes

Ingredients:

2 medium size sweet potatoes peel the skin of and cut into ½ inch slices

½ cup of roughly chopped hazelnuts

3-4 scoop of vanilla bean ice cream

4 tablespoon of honey

1 teaspoon of cinnamon

Directions:

1-Preheat the oven to 400 Fahrenheit Degrees.

2-Place the sweet potato slices on a large baking pan or cookie sheet. Try not to overcrowd the pan.

4-Sprinkle 1 teaspoon of cinnamon and drizzle 3 table spoons of honey over the potatoes.  

5-Roast for 25-30 minutes until they are caramelized. Do not forget to turn them halfway.  

6- Take sweet potatoes out of the oven and transfer them to a serving platter.

7-Top with chopped hazelnuts, honey and vanilla ice cream.
