Ingredients:
2 cups of Rice
4 eggs
3 tablespoons of olive oil
12 oz. package of cherry tomatoes on the vine
1 lbs. of broccoli florets
1 pint of shitake mushrooms cut into ½ inch slices
5-6 shallots, halved
1 cup of green olives, halved
8-10 green chili slices to garnish
8-10 red chili slices to garnish
8-10 fresh rosemary leaves to garnish
1/2 teaspoon of black sesame seeds
1/2 teaspoon of black pepper
3 teaspoons of salt
Directions:
1-Cook the Super Lucky Elephant Jasmine Rice Pilaf based on the package directions.
2- Roasting veggies: Meanwhile preheat the oven to 400 degrees Fahrenheit.
3-Place tomatoes, mushrooms, shallots, and green olives on a baking sheet. Then drizzle with 2 tablespoons of olive oil.
4-Roast about 15-20 minutes until the tomatoes start to open.
5-Take the tomatoes, mushrooms, shallots and green olives out of the oven and set aside.
6- Blanching Broccoli Florets: Fill a large bowl with water and ice cubes and set aside.
7- Bring a large-size pot of water to a boil over high heat and add 2 teaspoons of salt.
8-Place the broccoli florets in the boiling water and cook for 2-3 minutes.
9-Place the broccoli florets in the ice water for about 1-2 minutes in order to stop them from cooking further.
10- Take the broccoli florets out of the water and place them on a clean kitchen towel to dry.
11-Frying Eggs: Add 1 tablespoon of olive oil into a large nonstick pan over medium high heat.
12- Crack the eggs into individual bowls, that way you can remove any broken eggshells easily.
13- Add the eggs side by side in the pan and cook them about 3-4 minutes over medium high until the whites are fully cooked.
14- Place Rice into individual serving bowls and top with roasted tomatoes, shallots, mushrooms, olives, fried eggs and blanched broccoli.
15- Garnish the serving bowls with chili slices, rosemary leaves, and black sesame seeds. Sprinkle salt and pepper and drizzle olive oil over top.
16-Serve this super healthy and delicious meal warm or room temperature. Happy Eating!
