What can I say? I love picked onions and cannot get enough of them. This one is very special one since one of my best friends loved it.

Ingredients:
2 tablespoon mayonnaise
1 tablespoon butter
4 slices of rustic bread
8 thick slices of white cheddar cheese
½ cup picked onions see the recipe at Pickled Red Onions
8 mint leaves to garnish
Directions:
1-Butter one side of each slice of the bread.
2-Spread two tablespoon of mayonnaise on the other side of the each bread slices evenly.
3- Place 4 cheese slices first then the pickled onions on top of the bread slices.
4-Preheat medium size sauté pan over medium-high heat.
5-Place two sandwiches in pan, and heat sandwich approximately 2-3 minutes on each side until the bread is golden brown and the cheese is melted.
