Ingredients:
2 lbs. stewing beef cut into 1 inch chunks
3 carrots cut into 1 inch pieces
3 garlic cloves minced
1 lb. baby potatoes cut into halves
1lb. green beans cut into halves
1 teaspoon dried thyme
6 cups beef broth
2 tablespoon Tomato Paste
1 teaspoon Black Pepper
2 teaspoon Salt
3 tablespoon olive oil
Directions:
1-Heat olive oil in a large Dutch oven or pot.
2- Brown the beef for 1-2 minutes each side and set aside.
3-Add onions and carrots to the pot and cook them until softened; about 5 -7 minutes.
4- Add tomato paste, minced garlic, and browned meat back to the pot.
5-Add beef broth, dried thyme, and potatoes to the pot.
6- Cover and simmer about one hour until the meat is tender over reduced heat.
7- Stir in green beans and simmer 5-10 minutes before serving.
8- Season with salt and pepper.
9- Serve when it is still hot.
