I developed this recipe for my kids since both of them loves pistachios and golden raisins. This is a really delicious snack with milk. The cookies are chewy, chocolaty and crunchy.
Ingredients:
1/3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
8 oz. dark chocolate
4 tablespoon unsalted butter
2 eggs
½ cup white sugar
1/3 chopped golden raisins
1/3 chopped pistachios
1 tablespoon honey
Directions:
1-Preheat the oven to 325 Fahrenheit Degrees
2-Add chocolate, butter and honey in a medium size glass bowl.
3-Set bowl over a saucepan of gently simmering water and do not let the bowl touch the water.
4-Heat the chocolate mixture, stirring occasionally, until it is about to be melted.
5-Remove the bowl from the saucepan and stir the chocolate until it is completely melted. Let it cool down completely.
6- Mix the flour with baking powder and salt in a small bowl.
7- Use an electric mixer, beat the eggs with the sugar until thick and pale about 2-3 minutes.
8- Fold egg mixture into melted chocolate mixture by using a rubber spatula then fold in the dry ingredients. Stir in the pistachios and golden raisins.
9- Line 2 baking sheets with parchment paper.
10-Scoop 1 tablespoon cookie dough onto the baking sheets about 2 inches apart.
11- Bake for about 15-20 minutes until the cookies are dry around the edges and softer in the center.
