Blueberry Cornmeal Cake

Let’s have some blueberry cake instead of blueberry muffins this time.

Ingredients:

3/4 cup all-purpose flower

1/2 cup cornmeal

2 cups fresh blueberries

1/2 cup honey

2 tablespoon light brown sugar

1/4 cup yogurt

1/4 cup vegetable oil plus more for the cake pan

1 egg

1 teaspoon baking powder

1/4 teaspoon salt

Directions:

1-Preheat oven to 350 Degrees Fahrenheit.

2- Grease three 10-inch cake pan, line with parchment paper, then grease the parchment paper.

3-Whisk flour, cornmeal, baking powder and salt together.

4-Mix oil, egg, yogurt, honey and sugar with an electric mixer about 2 to 4 minutes.

5-Add flour mixture and 1 cup of blueberries in and mix it until just combined.

6-Transfer the batter to the cake pan.

7-Place the rest of the blueberries on top.

8-Bake until golden brown about 35 -45 minutes.

9-Allow cake to cool completely in the pan before taking it out.
