Zucchini Muffins

Muffins do not have to be sweet all the time. We can create savory muffins too, right? Here is one I came up with and it is delicious.

Preparation time: 15 minutes

Cooking time: 35 minutes

Total Time: 50 minutes

Ingredients:

2 cups shredded zucchini

1 cup shredded sharp cheddar

½ cup chopped basil and mint

4 eggs

1/3 cup + 2 tablespoon all-purpose flour

1/3 cup corn meal

1 tablespoon olive oil

2 tablespoon milk

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon black pepper

Directions:

1- Preheat oven to 375 degrees.

2- Place muffin liners in a muffin tin.

3- Add the flour, corn meal, baking powder, black pepper and salt in a large bowl and stir to combine.

4- Squeeze grated zucchini over a bowl to remove excess moisture.

5- the milk, olive oil, eggs, chopped herbs, shredded cheese and shredded zucchini in another large bowl and stir to combine.

6- Add the wet ingredients to the dry ingredients.

7- Stir until just combined, no need to over-mix.

8- Fill the muffin liners almost all the way up.

9- Bake them for 30-35 minutes until they are golden brown.

10- Let them cool down to room temperature before serving.
