Salmon Patties

Did you know Salmon is one of the best sources of the long-chain omega-3 fatty acids, a great source of protein, source of Potassium, and high in B vitamins? This is one of those recipes everyone loves and we never have any left overs. It is not just very nutritious, it is also very delicious. I used Sizzlefish King Salmon  which I recommend strongly. Servings: 3 – 4

Prep time: 20 minutes

Freezer time: 15 minutes

Cooking time: 5 minutes

Total time: 50 minutes

Ingredients:

Makes 8-10 patties

1 pound of sizzlefish King Salmon

1 egg

¼ cups of chopped parsley

¼ cups of chopped scallions only the green parts

1 teaspoon of lemon zest

1 tablespoon of lemon juice

1 cup of bread crumbs

1 tablespoon of mayonnaise

2 tablespoon olive oil

1 ½ teaspoon of salt

1 teaspoon of black pepper

Salad Ingredients – Optional:

1 cup of Basil leaves

10 black olives

1 cup of Celery leaves

½ tablespoon of lemon juice

½ teaspoon salt & black pepper

½ tablespoon extra-virgin olive oil

Directions:

1- Preheat the oven to 350 Fahrenheit degrees

2- Season the salmon with 1 tablespoon of olive oil, 1 teaspoon of salt and ½ teaspoon of black pepper

3- Roast the salmon for 10 minutes until it is barely cooked.

4- Set the salmon aside until it is at room temperature about 10- 15 minutes.

5- Combine an egg, lemon juice, lemon zest, ½ teaspoon salt, bread crumbs, mayonnaise, herbs, scallions, and salmon in a large mixing bowl. Try not to over-mix, leaving some texture.

6- Prepare salmon patties by using an ice-cream scoop and place them on an oven sheet pan covered with parchment paper.

7- Keep them in the freezer about 10-15 minutes that they can get firm.

8- Add 1 tablespoon of olive oil in a large preferably Teflon pan and turn the heat to medium high.

9- Fry each side of the salmon patties about 2-3 minutes until they are golden brown.

For the salad dressing:

1- Combine ½ tablespoon of lemon juice, ½ tablespoon of extra virgin olive oil, ½ teaspoon salt and black pepper in a mixing bowl.

2- Place basil leaves, celery leaves and black olives on a serving platter and pour the salad dressing on it.

3- Place salmon patties on the salad and enjoy this healthy yet delicious meal with your loved ones.
