Red Pepper Soup

Red peppers are not eaten enough even though they are rich in antioxidants, vitamin A, B6 and C. Here is a delicious, simple, nutritious recipe that you can use red bell peppers as the main ingredient.  Give it a try!

Servings: 2-3

Preparation time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes

Red Pepper Soup

Ingredients:

4 red bell peppers cut in half

12 OZ jar of roasted red peppers

1 cup roughly chopped cilantro

8-10 cilantro leaves to garnish

1 tablespoon red wine vinegar

2 garlic cloves

2 table spoon olive oil

1/3 cups of water

1 teaspoon salt

1 teaspoon black pepper

½ teaspoon red pepper flakes

Directions:

1-Preheat the oven to 400 Fahrenheit degrees.

2-Add peppers on a large cookie sheet. Drizzle 2 tablespoons of olive oil on top and make sure they are covered.

3- Roast the red peppers about 20-25 minutes until they are soft.

4-Add roasted peppers, jar of roasted peppers with juices, garlic, 1 cups of chopped cilantro, red wine vinegar, salt, black pepper, red pepper flakes and water in a blender. (If you prefer thinner consistency, add more water)

5-Blend them about 3-4 minutes until the mixture is smooth.

6-Pour them to serving bowls and garnish with cilantro leaves.

7- Serve at room temperature or cold with chips, or bread.
