Grilled Cheese with Artichoke Hearts, Avocado and Salami

The school year is beginning and most of us are helping our kids with their virtual distance-learning.  I love to serve my kids healthy, simple, and delicious lunches they enjoy. This recipe is super simple and can be done in fifteen minutes which will make life a little easier. I used Reese Tender Small Artichoke Hearts to provide more nutrition to my kids. Ingredients:

3-4 Reese Tender Small Artichoke Hearts cut into thirds

4 slices of rustic bread

1 cup of shredded mozzarella cheese

1 ripe avocado sliced thinly

6-8 thinly sliced salami

1-2 tablespoons of softened unsalted butter

Directions:

1- Place bread on a flat surface/cutting board and spread 1 teaspoon butter over top side of each slice. You may want to spread more depending on the size of your bread slices.

2-Place two tablespoons of shredded mozzarella, 2-3 slices of avocados, 2-3 slices of Reese Tender Small Artichoke Hearts, 2-3 slices of salami, and one tablespoon of shredded mozzarella on the unbuttered side of the bread slices.

3- Place a bread slice on top and spread another teaspoon of butter on it.

4- Heat a large nonstick skillet over medium.

5- Place the sandwiches buttered side down in the skillet and cook it until the underside is golden brown and cheese is melted about 2-3 minutes.

Serve warm with your favorite sides or just by itself.
