I love cauliflower; it is one flexible vegetable you can flavor with any kind of spices or sauces you like. In this recipe I created Asian inspired cauliflower bites which are vegan, delicious and great way to entertain family and friends.

Ingredients:
1 medium size chopped (6-7 cups florets)
1 cup of soy sauce
1 tablespoon of lime juice
2 teaspoons of grated fresh ginger
1 tablespoon of spicy chili paste
1/3 cup of honey
1/3 cup of water + 1 tablespoon of water
1 tablespoon corn starch
1 tablespoon of olive oil
1 tablespoon of sesame seeds
2 Persian cucumbers cut into ½ inch slices ( optional )
1/2 cup of thinly sliced green onions just the green pats ( optional )
Directions:
1-Preheat the oven to 425 Fahrenheit Degrees
2-Place cauliflower florets onto a large cookie sheet covered with parchment paper and drizzle with olive oil.
3- Roast the cauliflower florets about 15-20 minutes until they start to soften.
4-Meanvile add soy sauce, lime juice, grated fresh ginger, spicy chili paste, honey and 1/3 cup of water into a large sauce pan over medium high heat and bring it to boil. It takes about 4-6 minutes to boil.
5-Add 1 tablespoon of corn starch and 1 tablespoon of water in a small bowl and mix until the cornstarch is dissolved.
6- Slowly whisk this into the saucepan while the sauce is boiling.
7- Stir frequently until the sauce is thick. You can make the sauce ahead of time, and it thickens more as it sits in the fridge.
8- Pour the sauce over florets and broil 5-10 minutes.
9- Sprinkle sesame seeds and serve with cucumbers slices and/or green onion slices.
