Smashed Sweet Potatoes with Feta & Yogurt Sauce

It is autumn and what is better than to have a great sweet potato meal which is super healthy and super yummy!

Servings: 3-4

Preparation Time: 10 minutes

Cook Time: 35 minutes

Total: 45 minutes

Ingredients:

2 pounds of small sweet potatoes

1 cup of Greek yogurt

4 oz. of Feta Cheese

1 tablespoon of lime juice

2 jalapenos sliced ½ inch thick

1 teaspoon of salt

1 teaspoon of black pepper

2 tablespoons of olive oil

¼ cup of mixed chopped herbs such as dill, oregano, basil (whatever you have handy)

Directions:

1- Bring a large pot of water to a boil. Make sure you have enough water so the sweet potatoes are covered by at least 1 inch of water.

2-Add sweet potatoes into the water and boil them until they are tender about 20-25 minutes.

3-Meanwhile add Greek yogurt, Feta Cheese and lime juice into a blender and blend until the mixture is smooth about 2-3 minutes.

4- Set the oven to broil at high temperature.  

5- Place the sweet potatoes on a large cookie sheet and drizzle with olive oil, salt and pepper.

6-Place the sweet potatoes on a top rack under the broiler for 5-7 minutes each side.

7- Smash the sweet potatoes. I used bottom of a glass to smash my sweet potatoes and recommend it.

8-Let the sweet potatoes cool down before drizzle with the yogurt-feta sauce about 5-10 minutes.

9-Place the sweet potatoes onto a large serving platter, drizzle with feta-yogurt sauce, top with jalapeno sliced and herbs.
