Caramel Pecan Blondies

It is November which means time to bake goodies and share with loved ones. Here is one delicious, healthy, simple recipe I created with “Bob’s Red Mill Almond Flour”.

Servings: 4 -6

Preparation Time: 15 minutes

Cook Time: 30

Total Time: 45 minutes

Blondie Ingredients:

1 ½ cup of “Bob’s Red Mill Almond Flour”

½ cup of vegetable oil

3 large eggs at room temperature

1 teaspoon of baking powder

¼ cup of dark brown sugar

1/8 teaspoon of salt

Caramel Sauce Ingredients:

1 cup of heavy whipping cream

2 tablespoons of dark brown sugar

2 tablespoons of unsalted butter

1 teaspoon of cinnamon

½ teaspoon of nutmeg

½ teaspoon of ground cloves

½ teaspoon of salt

Candied Pecans Ingredients:

2 cups of pecans

1/8 teaspoons of salt

2 tablespoons of maple syrup

Directions:

Blondie;

1- Preheat the oven to 325 degrees Fahrenheit.

2- Lightly grease a 9×9 baking pan.

3- Combine “Bob’s Red Mill Almond Flour”, baking powder, and salt in a medium bowl. Mix until incorporated.

4- In the bowl of a stand mixer, mix the oil and dark brown sugar together. Add the eggs and mix on high until light and fluffy, about 2-4 minutes.

5- Pour the dough into the greased baking pan.

6- Bake for 15-17 minutes until cooked through.

7- Let cool for at least 15 minutes.

Caramel Sauce:

1-Add dark brown sugar, heavy whipping cream, butter, cinnamon, nutmeg, cloves, and salt into a small sauce pan.

2-Bring it to a boil while constantly stirring until sugar is dissolved over medium-high heat; about 5-7 minutes.

3- Let cool for at least 5 minutes.

Candied Pecans:

1-Add pecans, honey, and salt into a medium pan.

2-Cook it until honey is dissolved and pecans start to stick to each other; about -3-5 minutes.

3- Let cool for at least 5 minutes.

Assemble: Cut blondies into squares, drizzle with caramel sauce, and top with candied pecans! Happy eating!
