Shrimp and Butter Bean Salad

Shrimp is one thing I would love to have every season. Here is one simple, delicious, nutritious meal that you need to share with your loved ones!

Cook time: 5 minutes

Total time: 20 minutes

Ingredients:

1 pound of shrimp

2 16 oz. cans of butter beans or northern beans

2 Persian cucumbers, sliced into half inch slices

1 medium size watermelon radish sliced into half inch slices

1 medium size radish sliced into half inch slices

1 green chili sliced thinly

½ lemon thinly sliced to garnish

8-10 cilantro leaves to garnish

1 tablespoon lemon juice

4 tablespoons of olive oil

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon of dried oregano

1 teaspoon of salt

1 teaspoon of black pepper

Directions:

1-Mix 1/2 teaspoon of black pepper, 1/2 teaspoon of salt, 1/2 teaspoon of smoked paprika, ½ teaspoon of oregano and 1/2 teaspoon of garlic powder in a medium bowl.

2-Coat the shrimp with the spice mixture you prepared on step 1, let it sit about 3 minutes.

3-Dressing: Add 1 tablespoon of lemon juice, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper and 2 tablespoon extra-virgin olive oil in a jar shake it until combined. 

4- Heat 2 tablespoons of olive oil in 12-inch skillet over medium high heat until oil starts to bubble.

5- Add the shrimp to the pan in single layer and cook about 1-2 minutes each side until the color of the shrimp changes to light pink.

6- Rinse and drain the canned butter beans.

7- Add the beans, sliced cucumbers, radishes, chilies in a large bowl and drizzle with the dressing you prepared at step 3.

8- Plate the shrimp and bean salad on a serving plate and garnish with cilantro leaves and lemon slices.
