Gin with Honey, Mint and Lime Syrup

I used Empress 1908 Gin for this recipe which is a hand-crafted spirit from Victoria Distillers in British Columbia, Canada. Empress 1908 Gin is micro-distilled in small batch copper-pot stills using eight botanicals: juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms and the Fairmont Empress Blend Tea.

Preparation Time: 20 minutes

Total Time: 30 minutes

Ingredients:

1 ½ cups of water

½ cup of honey

1 cup of fresh mint

1 tablespoon of fresh lime juice

½ cup of @Empress1908Gin

2 cups of crushed ice

3-4 lime wedges to garnish

5-7 fresh mint leaves to garnish

Directions:

1-Combine water, honey, fresh lime juice and mint leaves in a small saucepan.

2-Bring to a boil, stirring until honey dissolves.

3-Simmer for 5 minute and let the syrup cool down about 15 minutes.

4- Fill each glass with 1 cup of ice.

5- Pour the ¼ cups of gin over the ice, and fill the glass with mint, lime, and honey syrup.

6- Garnish with the lime wedges and mint leaves.
