I have never had breakfast tacos with fried egg before this one , have you? Well, this is a wonderful opportunity for you to try it.

Total time: 30 minutes
Ingredients:
4 eggs
4 soft flour tacos (8 inches)
½ pound of 85/15 ground beef
½ pint of grape tomatoes
2 tablespoon olive oil
1 tablespoon fresh thyme
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
2 tablespoon salt
3 teaspoon black pepper
Directions:
Browned Ground Beef:
1-Place the ground meat in a medium nonstick skillet.
2-Season it with 1 tablespoon salt, paprika, oregano and 1 teaspoon black pepper.
3-Use a wooden spoon or heatproof spatula to break up the ground beef into equal-size pieces as it cooks.
4-Cook over medium-high heat about 6-8 minutes until the ground beef is no longer pink.
Sautéed Tomatoes:
1-Heat 1 tablespoon olive oil in a medium size skillet over medium-high heat until hot about 1-2 minutes.
2-Add tomatoes and season with 1 tablespoon fresh thyme, ½ tablespoon salt and 1 teaspoon black pepper.
3-Sautee shaking pan frequently until tomatoes soften about 2 minutes.
Fried Eggs:
1-Heat 1 tablespoon olive oil in medium size nonstick skillet over medium-high heat until hot about 1-2 minutes.
2-Break eggs into the pan 1 at a time.
3-Reduce heat to low.
4-Cook until whites are set about 3-4 minutes and yolks begin to thicken but are not hard.
5-Season them with ½ tablespoon salt and 1 teaspoon black pepper.
Assempling:
Place a tablespoon of a ground beef, one egg and a few tomatoes on top a warm tortilla. Enjoy!
