Pickled Red Onions

My favorite onions are the red ones or purple ones. This is the recipe I came up as a salad topic. Then I started to use it in the sandwiches. My kids loved it so much that they eat red pickled onions as a snack! Easy to make it and you can save it in the fridge up to 2 days. Enjoy it!

Ingredients:

1 medium red onion

½ cups fresh lemon juice about 2 lemons

¼ cups red wine vinegar

1 ½ cups water

1 teaspoon salt

1 teaspoon sugar

Directions:

1-Combine lemon juice, red wine vinegar, water , salt and sugar in a 16 oz jar.

2-Close the jar lid tightly and shake it until the sugar and salt is dissolved.

3-Peel the onion and cut it to thin half moon slices and add to the jar.

4-Keep the jar in the fridge for 1-3 hours before you eat it.
