Shrimp Salad Platter

Summer is here. What is better than to have delicious, healthy yet simple meals that you can share with your loved ones?! Eat better feel better. I am using Pure Flavor  Juno Bites Red Grape Tomatoes and Mini Cucumbers for this recipe. Pure Flavor provides fresh, delicious and exceptional quality products. Cook time: 5 minutes

Total time: 20 minutes

Ingredients:

1 cup Juno Bites Red Grape Tomatoes, cut into halves 

Mini Cucumbers  sliced into half inch slices

1 pound of shrimp

1 avocado sliced into half inch slices

1 cup picked onions – see the recipe at Pickled Red Onions

Or just use 1 medium size red onion thinly sliced

1 cup of corn

2 lemons

1 tablespoon mixed herbs such as parsley, mint, and cilantro

2-3 tablespoon extra-virgin olive oil

2 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

Directions:

1-Mix 1 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon smoked paprika and 1 teaspoon garlic

2-Coat the shrimp with the spice mixture you prepared on step 1,  let it sit about 3 minutes.

3-Meanvile mix 1 tablespoon lemon juice, 1 teaspoon salt, 1 teaspoon black pepper and 1 tablespoon extra-virgin olive oil in a bowl or a jar until combined.  

4- Heat 1 tablespoon extra-virgin olive oil in 12 inch skillet over high heat until oil starts to bubble.

5- Add the shrimp to the pan in single layer and cook until about 1-2 minutes each side.

6- Let the cool down about 5 minutes.

7- Plate all the sliced veggies, fruits and shrimp on a platter and drizzle with the dressing you prepared at step 3.

8-Top with mixed herbs and enjoy!
