Arugula, Spinach & Salmon Salad

Salads are one of the best kinds of meals that are healthy, simple and beautiful. You can make this filling nutritious salad quickly for your family and enjoy a meal together.

 I have a “Baby Arugula & Baby Spinach” salad recipe here and I promise you will love it. I use “Earthbound Farm Organic Baby Spinach Baby Arugula”.  It is organic, triple washed, ready to use; and contains vitamin A, C , Calcium, and Iron. I topped these fresh beauties with roasted salmon, spicy chickpeas, avocados and more. You need to try it!

Ingredients:

5 oz. container Earthbound Farm Organic Baby Spinach Baby Arugula

1 pound of Salmon filets

1 can of (16 oz.) Garbanzo Beans

1/2 cup of shredded red cabbage

1 medium size carrot peeled with cut into ½ inch circles about ½ cup

1 ripe avocado sliced into ½ inch thick slices

2 tablespoon of fresh lemon juice

1 tablespoon of red wine vinegar

4 tablespoons of olive oil

¼ teaspoon of garlic powder

¼ teaspoon of cayenne pepper

½ teaspoon white sugar

2 teaspoons of salt

1 teaspoon of black pepper

Directions

1-Preheat your oven to 375 Fahrenheit degrees.

2-Quick Pickled Red Cabbage: Add shredded cabbage, 1 tablespoon of lemon juice, 1 tablespoon of red wine vinegar, ½  teaspoon of salt and ½ teaspoon white sugar and toss to combine and let it sit in room temperature.

3-Roasted Salmon: Season salmon filet with 1 tablespoon of olive oil, ½ teaspoon of salt and ½ teaspoon of black pepper. Place salmon, skin side down, on a baking sheet covered with parchment paper.  Roast it at 375 Fahrenheit degrees until salmon is cooked through, about 15 to 17 minutes. Let it rest for about 5-10 minutes.

4-Roasted Spicy Chickpeas: Rinse and dry the chickpeas. Season them with 1 tablespoon of olive oil, ½ teaspoon of salt, ¼ teaspoon of garlic powder and ¼ teaspoon of cayenne pepper. Place chickpeas on a baking sheet covered with parchment paper. Roast them at 375 Fahrenheit degrees about 17-20 minutes. Let it rest for about 5-10 minutes.

Recommendation: I roast chickpeas and salmon at the same time which makes it easier.

5- Dressing: Meanwhile add 2 tablespoons of olive oil, 1 tablespoon of lemon juice, ½ teaspoon of salt, ½ teaspoon of pepper in a mixing bowl and whisk them for about 1-2 minutes until combined.

6- Place Earthbound Farm Organic Baby Spinach Baby Arugula into a large serving bowl. Top them with salmon, chickpeas, pickled cabbage, carrot, and avocado slices and lastly drizzle with the lemon dressing.
