Cucumber Yogurt Soup

Yogurt is one of the most popular foods in Turkey. It is used to make sauces, baked goods, drinks and soups. My mother made our own yogurt during my childhood which was amazing. I remember my mother’s thick and super yummy yogurt every time I use yogurt in my recipes. This recipe is a great alternative if you need a break from a salad.

Servings: 3-4

Preparation & Total Time: 30 minutes

Ingredients:

3 cups of shredded cucumbers

½ cup of ½ inch sliced cucumbers

½ cup of ½ inch sliced jalapenos

4 cups of yogurt

1 tablespoon of lemon juice

1 teaspoon of crushed garlic

3 tablespoons of extra virgin olive oil

1 tablespoon of roughly chopped mint

1 tablespoon of roughly chopped dill

2 teaspoon of salt

2 teaspoons of red pepper flakes

Directions:

1- Add 2 tablespoons of olive oil and 1 teaspoon of red pepper flakes in a microwave safe bowl and microwave it for 1 minute. Set it aside until it is at room temperature.  

2- Add shredded cucumbers, yogurt, salt, lemon juice, crushed garlic, 1 tablespoon of extra virgin olive oil in a large mixing bowl and combine.

4- Place the mixture into the individual serving bowls.

5- Garnish the bowls with sliced cucumbers, jalapenos, chopped mint and dill.

6-Drizzle red pepper oil (step 1) on top of each bowl of soup and sprinkle red pepper flakes.
