We do not eat green beans often, do we? Green beans are a rich source of vitamins A, C, and K, and of folic acid and fiber. When I research “green bean recipes”, there are not many of them around. Here is one of my recipes that are so simple, yummy and quick.

Preparation time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes
Ingredients:
1 lb. of fresh green beans
½ cups of pickled red onions see the recipe at Pickled Red Onions
½ cup of pitted green olives
1 cup halved grape tomatoes
10-12 ½ inch jalapeno slices
2 tablespoons of extra virgin olive oil
1 tablespoon white wine vinegar
½ teaspoon black pepper
1 table spoon + 1 teaspoon salt
Directions:
1-Dressing: Whisk olive oil, vinegar, 1 teaspoon of salt and black pepper until combined.
2- Set aside a large bowl of ice water before blanching the beans.
3-In a large pot, bring 4 quarts water and 1 tablespoon salt to boil.
4-Add the green beans and boil until tender-crisp, but still bright green, about 4 to 5 minutes.
5-Immediately plunge them into ice water to stop the cooking.
6-Place the green beans, red onions, jalapeno slices, olives on a serving plate and drizzle the dressing on top.
7- Serve at room temperature or cold, either way delicious.
