It is already fall and winter is coming soon! We all need comforting, simple, delicious and healthy recipes in our lives during sweater season. I used Pioneer Cajun Shrimp & Rice Meal Sauce and Seasoning Mix to make my comfort food this time.

Servings: 3-4
Preparation Time: 15 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
1 lb. peeled and deveined shrimp
2 cups of water
2 cups of chopped tomatoes
1 cup of chopped onions
1 cup of chopped red bell peppers
½ cup of chopped green peppers
½ cup of chopped green onions
4 tablespoon of olive oil
1 pkg. Pioneer Cajun Shrimp & Rice Meal Sauce and Seasoning Mix
2 cups of cooked rice
Directions:
1-Add 2 tablespoons of olive oil, tomatoes, onions, red bell peppers and half of the 1 pkg. Pioneer Cajun Shrimp & Rice Meal Sauce and Seasoning Mix (https://pioneerbrand.com/portfolio-posts/cajun-shrimp-rice/) in a large pot over medium high heat.
2-Cook about 15 minutes over medium high heat until the veggies are softened.
3- Add 2 cups of water into the pot and cook 5 more minutes over high heat until it starts to boil.
4- Blend in the same pot with a hand blender about 3 minutes until the veggie puree is smooth.
Note: If you do not have a hand blender, use a stand one, if you don’t have either, mash them by hand.
5-Meantime, add 2 tablespoons of olive oil in a pan and the rest of the 1 pkg. Pioneer Cajun Shrimp & Rice Meal Sauce and Seasoning Mix
6- Cook the seasoning about 3 minutes and then place the shrimp into the pan.
7-Sear each side of the shrimp about 2 minutes or until it is pink.
8-Place rice, veggie puree and seared shrimp into serving bowls. Top them with chopped green onions and green peppers.
