Roasted Chicken Quarters and Veggies

What is better than an easy, healthy and simple family dinner during cold nights? Not a thing!

Here is one super simple recipe that you will love and try it over and over.

Servings: 4

Preparation time: 60 minutes

Cook time: 60 minutes

Total time: 120 minutes

Ingredients:

4 chicken quarters

1 pint of grape tomatoes

1 medium onion cut into 1/8s

4-6 garlic cloves

¼ cup of chopped parsley

2 tablespoons of lime juice

2 tablespoons of olive oil

1 teaspoon of black pepper

2 teaspoons of salt

Directions:

1-Place the chicken, onions, garlic cloves and cherry tomatoes into a large bakeware.

2-Mix lime juice, olive oil, salt and black pepper in a medium bowl and drizzle over the chicken.

3-Cover the chicken with aluminum foil and keep in the fridge about 30 minutes.

4-Take the chicken out of the fridge and keep it over the counter about 30 minutes covered.

5- Preheat the oven to 400 Fahrenheit degrees.

6- Place the covered chicken into the oven and roast about 30 minutes.

7-Decrease the temperature of the oven to 375 Fahrenheit degrees.

8-Uncover the chicken and roast about 20-30 more minutes until the internal temperature of the chicken shows minimum 165 Fahrenheit degrees. (FDA says that the safe cooked chicken temp is 165°F)

9- Let the chicken cool down and enjoy your simple, delicious and healthy

dinner!
