I just tried “Shishito Peppers” and fall in love with them. They have a great texture, taste and the looks. Let’s create a recipe with them that you will love!
Servings: 2-3

Total time: 35 minutes
Ingredients:
1 lb. yellow baby potatoes
6 oz. Shishito Peppers
3 tablespoons of extra virgin olive oil
1 teaspoon of smoked paprika
1 ½ teaspoons of salt
½ teaspoon of black pepper
½ teaspoon of garlic powder
1 tablespoon of fresh thyme leaves to garnish
1 tablespoon of fresh oregano leaves to garnish
Directions:
1-Wash the potatoes and place them in a large pot.
2-Fill the pot with water until the potatoes are covered by at least 1 inch of water.
3-Add 1 teaspoon of the salt into the water.
4-Bring the water to boil over high heat and continue to cook until potatoes are tender which about 15-20 minutes.
5-Meanwhile heat your griddle to high temperature.
6-Cover the Shishito Peppers with 1 tablespoon of olive oil and place them on the griddle.
7- It takes 1-2 minutes each side of the Shishito Peppers to be cooked. Try not to burn them!
8- While peppers are being cooked on the griddle; add 2 tablespoons of olive oil, ½ teaspoons of salt, pepper, garlic powder and 1 teaspoon of smoked paprika in a medium bowl and microwave it for 1 minute.
9- Take the bowl out of the microwave and mix the dressing and microwave 1 more minute.
10- Smash the potatoes with the bottom of a glass or measuring cup whatever you have in handy while they are still hot.
11- Place them under the oven broiler at high temperature about 5 minutes.
12- Place smashed potatoes, grilled Shishito Peppers on a serving plate.
13-Top them with fresh herbs and drizzle with the dressing.
14- Serve hot or room temperature as a side dish or a meal. Either way so yummy!
