Sweet and Spicy Meatballs

Meatballs are being served very often in my house since they are one of the family favorites. This one is spicy and sweet at the same time. You may serve with noodles, rice as a meal or by itself as an appetizer.

Serves: 3-4

Preparation Time: 20 minutes

Cook time: 40 minutes

Total Time: 60 minutes

Ingredients:

Meatballs:

2lbs of ground beef (85 percent lean/15 percent fat)

1 teaspoon of salt

1 teaspoon of black pepper

1 teaspoon of onion powder

1/3 cup of bread crumbs

1 egg

1/3 cups of chopped cilantro

Sticky Sauce:

1 cup of soy sauce

1 tablespoon of lime juice

2 teaspoons of grated fresh ginger

1 tablespoon of spicy chili paste

1/3 cup of honey

1/3 cup of water + 1 tablespoon of water

1 tablespoon corn starch

1 tablespoon of sesame seeds

2 Persian cucumbers cut into ½ inch slices (optional)

1/2 cup of thinly sliced green onions just the green pats (optional)

1 teaspoon black and white sesame seeds

Directions:

1-Preheat the oven 375 Fahrenheit Degrees.

2-Add ground beef, salt, black pepper, onion powder, bread crumbs, chopped cilantro and egg in a large mixing bowl.

3- Mix the ingredients until evenly combined, try not to overmix them.

4- Using an ice cream scoop, scoop and roll the mixture into balls and place them on a baking sheet covered with parchment paper. 

4- Roast for 20-30 minutes, or until a thermometer measures the internal temperature of the meatballs to be 160°F.

5-Meanvile add  soy sauce, lime juice, grated fresh ginger, spicy chili paste, honey and  1/3 cup of water into a large sauce pan over medium high heat and bring it to boil. It takes about 4-6 minutes to boil.

6-Add 1 tablespoon of corn starch and 1 tablespoon of water in a small bowl and mix until the cornstarch is dissolved.

7- Slowly whisk this into the saucepan while the sauce is boiling.

8- Stir frequently until the sauce is thick. You can make the sauce ahead of time, and it thickens more as it sits in the fridge.

9- Pour the sauce over the meatballs.

10- Place the meatballs on a serving plate and top with cucumber, scallion slices and sesame seeds.
