Fried Eggs with Mushrooms

This is a recipe of simplicity. You can have this one as breakfast, lunch or dinner. It is delicious and healthy. It takes less than 30 minutes to make it. Here we go!

Servings: 3-4

Preparation time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes

Ingredients:

2 pints of white mushrooms cut into ¼ inch slices

4 eggs

¼ cup of balsamic vinegar

2 tablespoon of olive oil

½ teaspoon of salt

½ teaspoon of black pepper

¼ cups of chopped scallions to garnish

Directions:

1-Add olive oil, mushrooms, salt, pepper in a large sauté pan and cook about 5 minutes until mushrooms are soften over medium high heat.

2-Add balsamic vinegar into the pan and cook about 10 more minutes until it is reduced over medium high heat.

3- Crack the eggs on top of the mushrooms and cook 5 more minutes until the whites are set.  (If you prefer, you can cook more or less time for your liking.)

4- Top with chopped scallions and black pepper.

5-Serve with bread , rice, orzo or by itself. Enjoy!
